Une Petite Recette: Pesto Orzo Salad

Pesto Orzo Salad
Once springtime arrives, one of my favorite dishes to make is an orzo salad. One of my neighbors came over for lunch the other day and she had never had an orzo salad before (you can’t find orzo in supermarkets like Monoprix here), so I decided to make a pesto version for her. Here’s the recipe:

Pesto Orzo Salad
Ingredients
1/2 box of orzo
3 Artichoke hearts
2 cups of cherry tomatoes
Parmesan cheese (I like the ones that come roughly cut in tiny shards) to taste
Pesto to taste
Large handful of fresh basil
Optional: Toasted pine nuts.

Instructions
– Boil water for orzo.
– Add artichoke hearts to simmering water for 2 minutes, drain and roughly chop.
– Halve cherry tomatoes.
– Roughly tear basil.
– Once orzo is done (about 8 minutes), drain and add directly onto above ingredients.
– Add and mix pesto and parmesan cheese to taste.
– Sprinkle with some extra parmesan and fresh torn basil on top, and voila, c’est tout!
